Smoked Gochujang Chicken and Vegetable Stew


Ingredients


  • Boneless and skin off chicken / 2.2lbs
  • Diced onion / 1 piece
  • Diced carrot / 1 piece
  • Diced yellow pepper / 1 piece
  • Gochujang / 0.8oz
  • Garlic cloves / 3 piece
  • Ripe tomato / 18oz
  • Diced celery / 1 stick
  • Spanish smoked paprika / 0.1oz
  • Extra virgin olive oil / 0.4 oz
  • Bay leaf / 1 leaf
  • Rosemary
  • Black pepper
  • Salt

Direction


  1. Season the chicken with paprika, salt, and pepper.
  2. Heat the oil in a large casserole and add all the vegetables and bay leaf, except for the tomato.
  3. Cook for 5 minutes.
  4. Add the chicken and cook for 15 minutes on low heat until the meat becomes brown on both sides.
  5. Add gochujang and tomato, season with salt, and cover with a lid.
  6. Add rosemary and cook for 45 minutes on low heat.
  7. Serve with steamed rice on the side.
