Smoked Gochujang Chicken and Vegetable Stew
Ingredients
- Boneless and skin off chicken / 2.2lbs
- Diced onion / 1 piece
- Diced carrot / 1 piece
- Diced yellow pepper / 1 piece
- Gochujang / 0.8oz
- Garlic cloves / 3 piece
- Ripe tomato / 18oz
- Diced celery / 1 stick
- Spanish smoked paprika / 0.1oz
- Extra virgin olive oil / 0.4 oz
- Bay leaf / 1 leaf
- Rosemary
- Black pepper
- Salt
Direction
- Season the chicken with paprika, salt, and pepper.
- Heat the oil in a large casserole and add all the vegetables and bay leaf, except for the tomato.
- Cook for 5 minutes.
- Add the chicken and cook for 15 minutes on low heat until the meat becomes brown on both sides.
- Add gochujang and tomato, season with salt, and cover with a lid.
- Add rosemary and cook for 45 minutes on low heat.
- Serve with steamed rice on the side.
