Roasted Eggplant with Gochujang Meal Prep
Ingredients
- O'FOOD Gochujang Korean Chili Sauce / 1tbsp
- Eggplant
- Green Beans
- Radish
- Carrot
- Chili Powder / 1tbsp
- Minced Garlic
- Soy Sauce / 1tbsp
- Sugar / 2tbsp
- Oligo Syrup / 1tbsp
- Sesame
- Sesame Oil / 1tbsp
Direction
- Cut the eggplant into thick slices and score the flesh into a diamond crosshatch pattern.
- Slice the green beans and radishes.
- Thinly slice the carrot using a slicer.
- In a mixing bowl, combine O'FOOD Gochujang, 1 tbsp chili powder, 1 tbsp minced garlic, 1 tbsp soy sauce, 2 tbsp sugar, 1 tbsp oligo syrup, 1 tbsp sesame oil, and sesame seeds. Mix well.
- Stir-fry the green beans and then the sliced eggplant over medium heat until caramelized.
- Place the slices of eggplant on an oven tray and spread the sauce over the top.
- Cover the tray with aluminum foil and roast in a preheated oven at 180°C for 10 minutes.
- In a meal prep container, put brown rice, chickpeas, green beans, radishes, and carrots, then place the Gochujang roasted eggplant on top.
