Gochujang Butter Chewy Ricecake (Tteok)
Ingredients
- 8g Ofood gochujang paste
- 75g sugar
- 37g condensed milk
- 7g eggs
- 4g salt
- 4g vanilla extract
- 201g milk
- 75g melted unsalted butter
- 97g glutinous rice flour
- 52g tapioca starch
Direction
- Butter your mold and freeze for at least 30 minutes.
- In a bowl, mix together the sugar, vanilla, condensed milk, eggs, salt, and gochujang.
- Add in the milk & melted butter, then mix until smooth.
- Sift in the flour/starch and mix well until fully combined.
- Strain the batter to remove any clumps of flour for a smoother texture.
- Pour the batter into the mold.
- Bake at 390°f for 10 minutes, then lower the heat to 350°f and bake for another 20 minutes.
