Gochujang Butter Chewy Ricecake (Tteok)


Ingredients


  • 8g Ofood gochujang paste
  • 75g sugar
  • 37g condensed milk
  • 7g eggs
  • 4g salt
  • 4g vanilla extract
  • 201g milk
  • 75g melted unsalted butter
  • 97g glutinous rice flour
  • 52g tapioca starch

Direction


  1. Butter your mold and freeze for at least 30 minutes.
  2. In a bowl, mix together the sugar, vanilla, condensed milk, eggs, salt, and gochujang.
  3. Add in the milk & melted butter, then mix until smooth.
  4. Sift in the flour/starch and mix well until fully combined.
  5. Strain the batter to remove any clumps of flour for a smoother texture.
  6. Pour the batter into the mold.
  7. Bake at 390°f for 10 minutes, then lower the heat to 350°f and bake for another 20 minutes.
