Here is a simple recipe for making kimchi fried rice:

  1. Start by cooking the rice: Rinse 1 cup of short-grain white rice in a fine-mesh sieve until the water runs clear. Transfer the rice to a saucepan and add 1 1/2 cups of water. Bring the water to a boil, then reduce the heat to low, cover the saucepan, and simmer the rice for 18-20 minutes, or until the water is absorbed and the rice is cooked.

  2. While the rice is cooking, prepare the other ingredients: Thinly slice 1/2 cup of kimchi, dice 1/2 cup of cooked bacon or ham, and mince 1 clove of garlic. Crack 2 eggs into a small bowl and beat them with a fork.

  3. Heat a tablespoon of vegetable oil in a large frying pan or wok over medium-high heat. Add the sliced kimchi and diced bacon or ham to the pan and cook for 2-3 minutes, or until the bacon is crispy and the kimchi is heated through.

  4. Add the minced garlic and cooked rice to the pan and stir to combine. Cook for 2-3 minutes, or until the rice is heated through and starting to brown.

  5. Push the rice mixture to one side of the pan and add the beaten eggs to the other side. Cook the eggs for 1-2 minutes, or until they are set. Then, stir the eggs into the rice mixture.

  6. Serve the kimchi fried rice hot, garnished with sliced green onions and sesame seeds if desired. Enjoy!

Note: This recipe makes 2-3 servings of kimchi fried rice. You can double or triple the recipe if you want to make a larger batch. You can also add other ingredients to the fried rice, such as diced vegetables, cooked chicken or shrimp, or soy sauce. Experiment and find the combination that you like best!
